Maison Shaps Aligoté 2017
Our Aligoté is produced in a non-traditional method, which includes a pre-press maceration for six hours, followed by a barrel fermentation, sur-lie aging and full malolactic fermentation in older oak barrels. Thus creating a single varietal Aligoté that is richer, deeper, and more aromatic. This Aligoté came from two vineyard sites—one in Savigny-les-Beaune and the other in Bouzeron. The bright fruit notes express citrus and honeysuckle, while the palate has the crisp varietal acidity and good balance and length that is attributed to the pre-fermentation maceration.
